Mauro Colagreco celebrates a 1 MICHELIN Star 2022 achievement, hosting a four-day dining experience at Capella Bangkok's Cote restaurant

It has been one year and a half since the opening of Capella Bangkok's signature restaurant, Cote by Mauro Colagreco. Since then, Bangkok's most renowned epicures have given it top mark, and its culinary gems, drawing on the bounty of Thailand and the Mediterranean Riviera, have brought the restaurant's first Michelin star to the banks of the Chao Phraya River.

From April 27th to May 1st, 2022, Cote was pleased to welcome its founding Chef Mauro Colagreco to Thailand.

"I'm so delighted to be in Bangkok to finally celebrate the first Michelin star with all the team. It such an achievement," said Chef Colagreco. "This trip is a dream come true. It has been so challenging to travel the last years, being here in Bangkok, feeling the energy of the city, of my team and meet our dedicated guests, it's incredible."

The restaurant transports its guests from the Thai capital's storied riverside district to the French and Italian Riviera with culinary creations by Mauro Colagreco and his protege, Chef Davide Garavaglia. The Liguria-born chef has helmed Cote's kitchen since its opening and has translated Colagreco's philosophy and passion for sustainable and seasonal produce through a range of fascinating tasting menus and a signature '9-course Carte Blanche' gastronomic journey. Cote sticks to Colagreco's mission to deliver menus with refined simplicity and ingredient-driven preparations, served with bespoke hospitality and unparalleled wine pairings. Under Colagreco and Garavaglia's leadership, the restaurant earned its first Michelin Star in 2022.

Within Cote's 'Riviera to River' concept, menus feature flavors from the Mediterranean Riviera but also embrace the colors, textures and tastes of the age-old traditions of Thai cuisine where ginger, lemongrass, kaffir lime and pomelo make for captivating cross-border flavor profiles. During his stay in Thailand, Chef Colagreco with his team met with organic farmers at Poomjai Garden located next to the Bangkhuntien canal in Bangkok and Plean Yod Tarn community in Samutsongkhram province to source vegetables and herbs of the highest quality.

"For me, working with sustainable ingredients not only means following the seasons, it also means working the land with full respect and embracing what nature brings into the kitchen," Chef Mauro explained. "We have to be flexible and resourceful in adapting the menu to highlight the best produce available every single day."

On working with Colagreco at Mirazur, Chef Garavaglia said: "I could never forget Chef Mauro's dedication to the garden and his focus on 'listening' to nature as a principal way to guide his cooking. I am happy to cook with him in the kitchen again."

The 4-day dining experience with Chef Mauro Colagreco booked out quickly after the visit was announced. Cote's regular guests were eager to try Colagreco's take on the menu and meet the renowned chef in person.
