Drawing inspiration from the food of his native Sicily, the talented chef has created an exceptional a la carte menu, and a choice of three set dinner menus that focus on the fresh flavours of the Mediterranean.
Gaetano hails from Sciacca in the Agrigento region. The old fishing town, pushed up against the clear blue waters of the Mediterranean, is regarded as being at the culinary heart of traditional Sicilian cuisine. The island exhibits a stunning diversity of regional food and wine, and Gaetano’s contribution is a continuation of Italy’s important culinary heritage.
With the creation of his new menu he displays a fresh and exciting approach to classic antipasti, seafood, risottos, pastas and desserts as well as his own exquisite regional Sicilian favourites. The sun-drenched flavours of lemons, capers and tomatoes shine through, enhancing the premium quality meats, fish and seafood.
The selection of appetizers and salads includes healthy dishes such as green asparagus with parmesan cheese, warm Boston lobster salad with vegetables and horseradish, and grilled scallop and shrimps with borlotti bean sauce. A highlight of the appetizer menu is the cubed rougie duck liver with cranberry jam and fresh mango.
Chef Gaetano’s freshly made pasta features several notable dishes such as homemade tortelloni with pumpkin in a duck meat sauce, a melt-in-the-mouth oxtail lasagna, and homemade ravioli of green peas and garlic with a lamb ragout.
Selecting the finest and freshest fish, Chef Gaetano excels with yellowtail fillet in a lemon rosemary sauce, and the unforgettable snow fish with green asparagus, salina capers and sun-dried cherry tomatoes. Highly recommended meat dishes cooked to succulent perfection are grilled Wagyu rib eye in a balsamic sauce, and the roast lamb loin with potatoes in a Gorgonzola sauce.
An exceptional evening’s dining from a beautifully composed menu ends on a high note with a divine choice of desserts and cheeses.
