The Outstanding Wines of the World Wine Dinner will feature an enticing menu specially created by Chef Gaetano Palumbo to compliment the exquisite selection of renowned labels. The evening of refinement and sophistication begins with fresh oysters and stuzzichini from Chef Gaetano served with Veuve Clicquot Brut Yellow Label from France. Dominated by Pinot Noir, the wine has a firm structure while a third of Chardonnay gives it the elegance and finesse needed for perfect balance. The first course of this exceptional evening’s dining, features sturgeon fish with a lemon confit and salmon tartar paired with the renowned New Zealand wine, Cloudy Bay. The Chardonnay 2006 is beautifully matched to the fish dish with the Marlborough wine bringing the scent of white flowers and fresh citrus fruits - lemons, limes and grapefruit - all temptingly mingled with the savory complexity of toasted nuts and oatmeal. The delightful potato gnocchi with scallop, mushroom, saffron and speck ham follows, served with Green Point Shiraz 2006 from Australia. Wine expert James Halliday praises this outstanding medium-bodied wine as an "aromatic spicy red with delicious red fruit flavour, polished tannins and French oak." A highlight of the evening is the casserole of beef tongue and cheek in an orange and beetroot reduction served with Cape Mentelle Cabernet Merlot 2006 from Western Australia’s legendary Margaret River. Fruit for the blend is sourced from the estate’s Trinders Vineyard. The wine offers toffee-tinged red fruit on the nose with tangy savoury flavours — an ideal match for the rich beef dish.
