Drinking Tea Eating Rice, Japanese Restaurant at The Conrad Bangkok, welcomes a Japanese Guest Chef Satoshi Hata from Japan to demonstrate his unique French-influenced Teppanyaki Cuisine, from 18th — 27th February, 2010.
Satoshi Hata, the head chef of Teppanyaki section at Hilton Osaka’s Japanese restaurant “Genji”, has a very unique cooking style strongly influenced by French cuisine combined with Japanese traditional Teppanyaki. He is known for his creative cooking method, turning the iron plate of Teppanyaki into a tool for deep-frying, steaming, boiling in his never-ending pursuit of finding new innovative ways of Japanese cookery.
The common ingredient for Teppanyaki is beef, which is one of Chef Hata’s specialties, but he also concentrates on seasonal seafood and vegetable. Another unique side of his cuisine is modern presentation and his various sauces which are often made with fresh herbs, vegetables, western-based wine sauce, flavored vinegar and citrus.
Chef Hata’s recommended menu:
- Oyster in salt dome, tarragon butter sauce
- Steamed seafood with herbs, “Yuzu” vinaigrette
- Fresh Homard Zuppa di Pesce
- Prawn, shrimp and clam “Crystal Aum?ni?re”
- Steamed vegetables with herbs in dim sum basket, cheese fondue style
- Foie gras mille-feuille with truffle sauce
