Sambal is a chilli paste, a basic ingredient widely used in South East Asian cooking — Indonesia, Singapore, Malaysia and Southern Thailand. These influences in the menu are the “heart” of Sambal. The freshest fish, the finest seafood and the most exotic of fruits and produce are all displayed “centre stage” for diners to choose from personally and then watch them sizzle away on a custom made, open-fired charcoal grill while they select their accompaniments: sambal, chutney, wasabi cream to name a few. The menu is designed for grazing across courses with a wide variety of a la carte appetizers, salads and sides. And, with a nod to a distant tropical Latin cousin, perfectly grilled and roasted meats are presented on spits and carved tableside.
