Sheraton Grande Sukhumvit, A Luxury Collection Hotel, Bangkok, will host a gourmet wine dinner at its award-winning restaurant, Rossini’s, on Friday 25th June.
This month, Chef Federico Allegri invites discerning diners to savor his exquisite six-course menu of refined Italian cuisine created to compliment an exceptional selection of Sensi wines. An essential experience for gourmets and oenophiles alike, Rossini’s Sensi Super Tuscan Wine Dinner promises to be a memorable evening of inspired dining at the award-winning restaurant.
The Sensi family has produced wines from its vineyards in the Chianti area of Tuscany since 1890. The renowned winery brings together the fruits of exceptional terroir with the passion and knowledge required to craft exquisite wines.
The so-called Super Tuscan wines were first produced in the 1970s when a small group of wine makers from Tuscany, including the respected Sensi family, began to experiment with French grape varieties and new methods of production. The Tuscan winemakers happily abandoned traditional practices in an effort to shake off restrictive winemaking regulations and create a new style of red wine for modern palates. They replaced massive old casks with small French oak barrels, and planted Cabernet vines and other varieties alongside Italy’s ancestral grape, Sangiovese. Today, Sensi’s Super Tuscans are acclaimed by wine aficionados around the world and regarded as ‘revolutionary reds’.
The Sensi Super Tuscan Wine Dinner begins with Chef Federico’s delicious stuzzichini and savory bites accompanied by Villa Cornaro, Prosecco Spumante Extra Dry.
The first dish, fantasia, a tartare of scampi, salmon, tuna and scallop is paired with Tenuta San Giorgio, Pinot Grigio Piave, 2008, a distinctive wine with a delightfully fruity bouquet and a crisp flavour ideal with fish and seafood.
Second on the menu is rotolo di coniglio cotto a bassa temperatura con barbabietola da zucchero, Italian grey rabbit and “collonata” lard with beetroot sauce served with a Sensi Vernaccia San Gimignano DOCG, 2007. Vernaccia is regarded as one of Tuscany's great grapes. Sensi’s medium-bodied white is enlivened by aromas of orchard fruits and a welcome nuance of dried herbs and roasted nuts to compliment the game.
Next, the zuppa di fungi con animelle, thyme scented mushroom soup and sweetbreads, is accompanied by Sensi, Testardo, Sangiovese-Cabernet, 2005. Combining two prestigious grapes, this intensely coloured Super Tuscan delivers aromas of vanilla and tobacco followed by soft velvety tanins for a smooth finish.
The risotto al vino rosso con coscie di piccione, a perfectly al dente red wine risotto with pigeon confit is served with Dolgheri, Sabbiato, DOC, 2008. This engaging blend of Cabernet Sauvignon, Sangiovese, and Merlot with its subtle hint of spice proves the perfect match for the succulent pigeon.
Other highlights of this enriching gastronomic evening include agnello in due cotture con crema di mais, two cuts of lamb with two recipes to accompany Mossiere, Vino Nobile, di Montepulciano, DOCG, 2005, a noble Super Tuscan produced from Italy’s indigenous Sangiovese and Canaiola grapes.
The dining ends with an exquisite crema di cioccolaro fondente con gorgonzola e origano, chocolate cream with gorgonzola cheese and oregano paired with Moscato Bizzaro Manzoni, and coffee or tea with chocolate and biscotti.
