Bangkok--12 Jul--Raya Resort Cha-am Opened in April, Raya Restaurant and Seafood is an exciting addition to Cha-am’s dining scene. It has quickly become a new dining hot spot among local diners, families and travelers who crave for affordable sumptuous seafood and Western delights served with warm hospitality. The dining area is furnished to accommodate all types of customers. Couples can sit in an intimate corner, undisturbed, for a romantic meal, while families can opt for large tables. To add more fun and entertainment, there is live music nightly. Basically, Raya Restaurant and Seafood is a restaurant for everyone! At the kitchen’s helm is Chef Susie S. Nilklad, who brings with her over 10 years of culinary experience. In 1999, she started her career as a Thai sous chef in California, Los Angeles, but her passion for Italian and French cuisines brought her to Europe, where she trained in many finest kitchens. She studied the arts of Southern Italian cuisine at Italian Culinary Institute for Advanced Culinary and Pastry Arts in Calabria, Italy before attending Ecole Ritz Escoffier, a cooking school of The Ritz Paris Hotel, where she trained under Michelin-star Chef Michel Roth. She also received training in Riviera cuisine at Alain Ducasse Training Center in Argenteuil, and honed her pastry skills with the renowned Italian Pastry Chef Andrea Voltolina at his bakery in Padova, Italy. The menu offers an extensive selection of appetizers, freshly baked pizzas, pastas along with mouth-watering entrees made from freshly caught seafood. Each dish reflects Chef Susie’s creativity as she adds her own innovative touches to authentic French and Italian cuisines. Signature dishes include roasted succulent snow fish with stewed sweet pepper, roasted lamb cutlets with mint mashed potato and condensed mushroom jus, and the savory, tender duck leg confit served with homemade marmalade and fennel scented jus. There are also zesty Thai dishes such as stir-fried sea crab with black pepper sauce and deep-fried sea bass with spicy mango salad. Not to be missed is a selection of to-die-for European desserts.
