TAAN, Siam@Siam Design Hotel Bangkok's Thai fine-casual restaurant, is proud to present the latest installment of its hit Chef's Table dinner series, which this time will put a focus on rare-in-Bangkok Peranakan, or Nyonya, cuisine.
Set to take place on Thursday June 6th, from 6:30 pm, Chef's Table#3: Taste of Peranakan will welcome to the restaurant Khun Kanaporn "Aum" Chancherdsak, the owner of Trang's renowned restaurant Trang Ko'e, to showcase her meticulous cooking.
The history of Chef Aum's food is a long and rich one, taking inspiration from her Hokkien Chinese mother and generations of female cooks before her--in fact, the term "Nyonya" literally refers to Peranakan women. The cuisine dates as far back as the 13th century and the intermarriage of Chinese sailors and local women of the Malay Peninsula from Malaysia to Singapore to Thailand's South.
As such, Peranakan cuisine can be considered one of the world's first "fusion" cuisines, blending traditional Chinese techniques with indigenous Malay and Thai spices and ingredients, as well as colonial Dutch, Portuguese and English flourishes.
Aside from her modern take on Peranakan cuisine, Chef's Aum's nine-course dinner (priced at Bht 2,500++/person) will also explore under-the-radar Southwestern Thai food, with an emphasis on local seafood, to prove there's more to this region than popular dishes like pad sator, khua kling or gaeng som.
