Above Eleven, the new roof top bar and restaurant in Frasers Suite Sukhumvit 11, are pleased to announced the appointment of Chef Omar Frank Maruy, Executive Chef of Above Eleven.
Chef Omar Frank Maruy, who is of Peruvian and Japanese descent, spent his childhood in Peru where he found inspiration to begin his culinary journey. He has over 20 years of Peruvian cuisine experience, which started at the Mercer Street Grill, Toronto Canada. And his proficiency and skill in Peruvian cuisine tripled when given an opportunity to work with the world renowned chef, Gast?n Acurio in Astrid y Gaston. During this time, he also gained experience with the concept of Nikkei Cuisine, one of the worlds original fusion cuisines between Peru and Japan which begain with the Japanese immigration to Peru 120 years ago.
Chef Omar described his excitement at the opportunity to take the helm at Bangkok’s newest rooftop outlet. “I am very grateful for being given the opportunity to represent Above Eleven while also introducing Nikkei cuisine to Thailand. Peruvian food has been gaining popularity over the last few years due to the bio-diversity of our country in terms of ingredients and flavors brought in by immigrants from Africa, China, Japan and also from the different geographic regions of our country. I look forward to welcoming you all to taste the exotic flavours of one of the world’s original fusion cuisines.”
Chef Omar Frank Maruy is the current Executive Chef and Co-owner of Nikko Cebicheria Nikkei restaurant in Lima Peru where he has created the menu and trained all staff in the implementation of Japanese and Peruvian recipes. And now, Chef Omar is bringing his experience and creativity to Above Eleven, making the first step to introduce his original and irresistible tastes of Nikkei Cuisine to Bangkok.
