His vision for V9 is “a trendy restaurant serving excellent new world cuisine”. Having just arrived in Bangkok following a successful two years at the elite Sandy Lane Hotel in Barbados, Chef Dominique enjoys using fresh local produce and just the right combination of flavour. “It’s about balance and respecting the product, not masking it with too many flavours,” says Chef Dominique. “If you order beef tenderloin then you want to be able to taste the beef. You don’t want the sauce to be the only thing you taste. I enjoy using spices in my kitchen to enhance the product not hide it.” A professional chef for 14 years when Chef Dominique is not working he travels the world sampling cuisines and learning from new experiences. “After 8 years in the kitchen I took a year off to explore the world and its many different cuisines. I didn’t want to restrict myself to just French cuisine. I like to incorporate other flavours,” says Chef Dominique. Chef Dominique is passionate about creating the best experience for his customers, a task he is eager to fulfill at V9. “I love making people happy”, he says, “I can reach people through great food and service and the most satisfying thing for me is if someone tells me that they had a great evening.
